Crispy Peanut Butter Granola Bites

A few weeks back I shared these Granola Breakfast Cookies and this Dark Chocolate Granola Bark with you — both made with Golden Girl Granola. This is the last of three recipes I made with their granola samples, before stashing away the rest for snacking. These granola bites (very large bites — they could safely be called granola balls, but that name didn’t seem particularly fitting for my blog :)) are like a play on rice krispies, but with granola, peanut butter, and chia seeds in the mix.

I’m not much of a marshmallow muncher, at least not when they’re plain. I loved things like Lucky Charms as a kid, but as an adult it seems like there aren’t really so many occasions to eat marshmallows. Except, of course, in the occasional krispie treat, or as the key ingredients in a summer s’mores concoction. There is arguably little better than a hot, gooey marshmallow charred over an open flame, #AmIRight?! But I digress… Since we’re still not even close to s’mores making season, this recipe sufficed as a way to sneak some marshmallows into my diet.

These krispie bites aren’t exactly a dessert, since they have granola (a “breakfast food”), peanut butter (healthy fats), and chia seeds (a superfood) in them. I consider them a sweet snack, which I’m going to go out on a limb and say means they’re perfectly acceptable to eat any time of day. While I still had these kicking around the house, I made them my afternoon snack for a solid week at work, and they were really tasty!

If you like crispy, crunchy snacks, or things with lots of texture, then you’ll love these. I think I could have stood to add more marshmallows to give these bites a little more chew (and a little less crunch), but the flavor is spot on. If you’re not a fan of chia seeds (I know some people are strongly against them) you can totally leave them out — I just added them for a bit of extra healthy fat. I like to pretend to make things healthy sometimes, and I do that by adding in “healthy” ingredients. No one ever called me a nutritionist, and I’ll never claim to be!

Crispy Peanut Butter Granola Bites

Ingredients

  • 3 cups crispy rice cereal
  • 3 cups granola
  • 2 tablespoons butter
  • 1/4 cup smooth peanut butter
  • 1/2 bag (about 3 heaping cups) mini marshmallows
  • 1-2 tablespoons chia seeds, optional

Directions

  1. Line a baking sheet with parchment paper and set aside.
  2. Coat a large bowl with nonstick spray, then pour in the crispy rice cereal and granola (and chia seeds, if using). Set aside.
  3. In a medium saucepan over low heat, melt the butter, peanut butter, and marshmallows, stirring frequently, until smooth.
  4. Pour the marshmallow mixture over the cereal mixture and stir with a rubber spatula until the dry ingredients are evenly coated with the marshmallow mixture. Everything will be super sticky, but just keep at it the best you can!
  5. Once all of the ingredients are well incorporated, roll the mixture into balls of whatever size you'd like, and place on prepared baking sheet. Let sit at room temperature for 30 minutes or so to set up, and then store in an airtight container.
