This is gonna be a quickie post, but I just had to share my new favorite way to prepare a potato. No doubt you’ve seen hasselback potatoes all over lately, and for good reason — these babies are unbelievable. They’re beautiful to look at, and even more beautiful to eat — like gourmet baked potatoes, but about 100 times better. With wedges of roasted garlic nestled in between slices of golden brown, crispy-on-the-outside, tender-on-the-inside potato, can it really get any better?
These were so good, in fact, that I didn’t even get a picture of the finished product! But trust me, they looked heavenly — the presentation is super impressive, but the secret is they aren’t hard to make at all! We served them at a dinner party with sour cream and chives, but honestly you could eat them plain. With all the butter and olive oil you baste them with while they’re cooking, they come out perfectly seasoned. The flavor is simply unbelievable.
