New obsession: Hasselback Potatoes

This is gonna be a quickie post, but I just had to share my new favorite way to prepare a potato. No doubt you’ve seen hasselback potatoes all over lately, and for good reason — these babies are unbelievable. They’re beautiful to look at, and even more beautiful to eat — like gourmet baked potatoes, but about 100 times better. With wedges of roasted garlic nestled in between slices of golden brown, crispy-on-the-outside, tender-on-the-inside potato, can it really get any better?

These were so good, in fact, that I didn’t even get a picture of the finished product! But trust me, they looked heavenly — the presentation is super impressive, but the secret is they aren’t hard to make at all! We served them at a dinner party with sour cream and chives, but honestly you could eat them plain. With all the butter and olive oil you baste them with while they’re cooking, they come out perfectly seasoned. The flavor is simply unbelievable. If you’re so inclined to give them a try (and how could you not be?!),  hop over to Joy The Baker to see the final product (the pictures were my inspiration), and have at it with the recipe. Just might be the best decision you’ve made in a long while.

I’ve still got a bunch of pending posts to share, and some really super recipes, so get excited, and stay tuned! I’ll be back soon :)

With love, and sugar. Have a great week!

I absolutely love these too! I saw them on the Food Network randomly a while ago and had to make them as soon as I saw them. They’re sooo good!
