Chewy Chocolate Chip Gingersnaps

It’s a COLD one out there today! I hope wherever you are, you’re staying warm. I’ve got loads of layers on, and my tiny little space heater cranked up, which I am so so grateful for on days like today. Even with the heat on, I still feel a chill in the air. If only I had some of these cookies to cheer me up…

I made these a while back (still digging out from under loads of patiently waiting blog posts!) for an MSPCA bake-sale.  I really love any kind of ginger/molasses/spice cookies, so when I found this recipe it seemed to hit the perfect balance of festive, spicy and soul-warming. If you ask me, gingersnap-like cookies aren’t just good around the holidays, they’re good all the time – but I find I like them best when it’s cold and snowy outside, because their sweet spices warm me right up!

Chewy Chocolate Chip Gingersnaps

This recipe is a bit different than your traditional gingersnaps, because it lacks the iconic “snap” – instead these cookies are nice and chewy, with chocolate chips and cocoa powder added in to give it even more of a twist. I found them to be really in-your-face spicy  and at first I was almost surprised at their flavor, but after a few bites I decided I loved them. The cocoa powder makes them extra rich, and they feel like a really dressed-up version of gingersnaps These cookies just make you feel good, they are the perfect texture, so pretty to look at, and so pleasing to eat. If you’re anywhere near an oven, you should go make a tray right now!

My blog anniversary/blogiversary/blog birthday is January 25th, and Sweetly Serendipity will be THREE years old! My how time flies, it seems like just yesterday that I started writing in my little corner of the cyber world. Kevin and I have talked briefly about doing a post together, with something celebratory – maybe a cake or cupcakes? I’m hoping it’ll come to fruition, but in the (somewhat likely) case that it doesn’t, I’m sending my own blog an early virtual birthday wish. Thank you all so much for reading, this blog means the world to me, and I so appreciate any and all eyes that find themselves skimming these pages and recipes.

Here’s to the next three years, and beyond!
