Brown Butter Chocolate Chip Oatmeal Cookies with Coconut and Cherries

Believe it or not, these cookies are my first original recipe of the new year! How we already made it to late-January, I do not know. Winter is admittedly not my favorite time of year, but I hate it when time flies by so fast. I could really go for a bit of a slow down – and a couple of cozy snow days cuddled up in PJ’s with mugs of steaming tea and a good book. Sounds pretty wonderful right?! Mission this week is to figure out how we arrange that… ūüôā

So cookies seem to be an awfully frequent trend around these parts lately. See here and here and here. Can’t say that I mind though! Cookies are kind of awesome¬†– not to mention easy to make (and also really easy to consume… for better or worse!) I think I’ve shared similar iterations of this recipe on the blog many times before, but what’s one more cookie recipe? Surely can’t hurt.

Brown Butter Chocolate Chip Oatmeal Cookies with Coconut and Cherries

These cookies get a generous flavor boost from the browned butter, and the various “fillings” make for a really interesting play on textures. The dough doesn’t require any chill time, so this is a great quick-fix recipe when you just have to have a cookie¬†— and the best part is, you can play with the¬†add-ins! I really like the variety of dark chocolate chips – coconut – dried cherries here, because it’s a nice mix of rich, tropical, and tart, but you could easily used dried cranberries and white chocolate chips, or milk chocolate chips and some chopped nuts. Plenty of options.

My 5th (!!!!) blog anniversary is coming up a week from today, and I had originally hoped to do something elaborate to celebrate… but I may have to settle for something a bit more simple, since things have been so hectic lately. In the new year¬†I’m really trying to prioritize life activities — spending¬†more time pursuing the things and people most important to me, which sometimes means less time in the kitchen. All about balance, though!

Brown Butter Chocolate Chip Oatmeal Cookies with Coconut and Cherries

Ingredients

  • Brown Butter Chocolate Chip Oatmeal Cookies with Coconut and Dried Cherries
  • Ingredients
  • 1 cup butter, browned
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 cups white whole wheat flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 cup shredded sweetened coconut
  • 1 cup chocolate chips
  • 1/2 cup dried cherries
  • 2 1/4 cups old fashioned oats

Directions

  1. Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone baking mats and set aside.
  2. In a small saucepan, melt the butter. Continue cooking over medium heat until brown bits start to appear on the bottom of the pan, swirling to prevent burning. When the butter is golden brown and fragrant, remove from the heat and let cool to room temperature.
  3. In the bowl of a stand mixer, beat the sugar and cooled butter for several minutes until creamy. Add in the eggs one at a time, mixing after each addition. Mix in the vanilla.
  4. In a separate bowl, combine the flour, salt, baking soda and cinnamon. Slowly add the dry ingredients to the wet, and mix on low until combined.
  5. Add the cinnamon, chocolate chips, dried cherries, and oats to the dough, and mix on low until incorporated.
  6. Roll one inch balls of dough, and place on your prepared cookie sheets. Bake in preheated oven for 10-12 minutes, or until cookies are golden brown around the edges. Let cool on cookie sheets for 5 minutes, and then move to a cooling rack and cool completely.
