I’ve probably mentioned this before, but I am such a sucker for good marketing. As soon as seasonal and holiday-themed goodies hit store shelves (and barista counters), I am all over it. Think Pumpkin Spiced Iced Coffee from Dunkin, and Peppermint Mocha Lattes from Starbucks. Then, you extend that to goodies in the supermarket, like everything seasonal that Trader Joes has ever made (I love that place) — particularly, their Trader Joe’s Peppermint Joe Joe’s.  There is just too much goodness this time of year, and I find it utterly impossible to resist.

Upon sighting my first box of Peppermint Joe Joe’s, much like my experience with my first bag of cranberries this year, I bought a box. It’s been a rough fall in terms of eating — for some reason my sugar addiction has been out of control — but somehow it still seemed completely respectable, and even necessary, to toss a box of cookies into my cart. Here’s the logic I use (works every time): I need these for my blog. My readers (all 15 of you) will just be soooo disappointed if I don’t make something seasonal this year. I have to do it. HAVE TO! And then into the cart they go, and onto my thighs slaps another pound!

No but really, in all honesty, I am outstanding at convincing myself that I really do need any number of things, even if the reality is I could totally do without them. But once I commit to something — this time, baking with pepperminty sandwich cookies — I do make myself follow through. And so… I made those crunchy holiday cookies into Peppermint Mocha Oreo Cupcakes. Or Peppermint Mocha Joe Joe Cupcakes, but that doesn’t seem to have quite the right ring.

I started with this recipe, and really didn’t change much, except that I used white whole wheat flour instead of all-purpose, and I tucked a Peppermint Joe Joe into each cupcake cavity before filling it up with batter. Then, I chopped up another holiday favorite of mine — Mint M&M’s (swooooooooon), and covered the tops of each frosted cupcake generously with those. I’d say I used about 1/2-3/4 cup M&M’s.

The resulting cupcake is beautiful, delicious, and totally festive. Using candy canes like Sally did would probably be even more beautiful, though I wanted to use up my bag of Mint M&Ms. I also love her idea of using ganache — because let’s face it, when you’re already made these ridiculously decadent cupcakes, why not add one additional layer of sugary love?
