Cranberry Orange Spice Cake with Citrus Cream Cheese

To be quite honest, I haven’t seen cranberries in the grocery store for a while. Can you even get them in February? Whether you can or not, I know it isn’t exactly cranberry season, so as you might assume, this was a holiday dessert. Still digging out from my backlog of posts… I could make a lot of excuses here about how busy it’s been and how I haven’t had much time to blog (all true), but you’ve heard it all before, so let’s just get to it, shall we?

I’ll admit that the photos of this cake are what drew me in in the first place. It’s quite beautiful, and totally unique. I wanted to make something that would look impressive sitting on a holiday table, but that’d also knock it out of the park in the flavor department. Turns out I made a good choice!

This cake is a fusion of many things I love — spice cake, citrus, cream cheese, and tart cranberries. It had all the makings of a truly memorable dessert! Once I looked at the recipe more closely, I noticed it had less sugar than a typical cake (at least of this size) tends to have, and absolutely no sugar at all in the cheesecake layer. Not wanting to mess with it too much, I stuck to the prescribed amount of sugar in the cake itself, and added just a tablespoon of sugar to the cream cheese mixture.

The final result is a pleasingly dense gingerbread cake, with a tender cheesecake layer on top, sweet clementines and tart cranberries to round it all out. The cake is most certainly not sweet, but it’s also not unpleasantly lacking in sugar. I believe the evening we served this, we also served another much sweeter dessert, and the two balanced each other nicely. I served the cake with a dollop of sweetened whipped cream, and it was the absolute perfect accompaniment. Turns out you can make a delicious dessert without all that sugar!

I loved this cake, both in flavor and texture, and how positively beautiful it looked. It was truly festive, and delicious. I can’t wait to try another cake + cheesecake combo in the future!

You can find the recipe I used at Some the Wiser. As noted, the only things I changed were (1) adding 1 tablespoon of sugar to the cream cheese mixture, and (2) swapping out 1 1/2 cups of all-purpose flour for wheat flour. Everything else was as stated!
