How I start a blog post is largely dictated by my mood when I sit down to write it, and today that mood is decidedly cranky. I have my first cold of the season, and generally I only get one a season, so when it arrives I tend to be a bit of a grouch. I apologize in advance! The good news is I’m writing about something I love, chocolate! Double chocolate. And it’s goooood.
I was assigned Manuela’s blog, Manu’s Menu, for the November edition of the Secret Recipe Club. She has a really interesting and diverse set of recipes, which I would chalk up to her interesting and diverse history. She was born in Italy, and now lives in Australia, two completely different places with completely different food perspectives. I had a lot of fun looking through her recipes, and was really happy with my recipe pick.
Originally I was looking for a recipe on Manuela’s blog for basic brownies, so that I’d have a canvas for using up lots of leftover Halloween candy. She has this recreation of a Jamie Oliver recipe on her blog, which I knew would be delicious, but when I came across this recipe for Chocolate Cheesecake Brownies, I couldn’t say no. It was one of those times when the photos won me over, and I was completely sold.
I baked these brownies with the help of an old, dear friend who I hadn’t seen in a while. What a treat it was to be spending time with her AND baking! Admittedly she did a lot of the brownie construction for this recipe, I just watched and guided (probably for too much for her liking), and then did a great job tasting them at the end.
These brownies are very sweet, with a pleasing contrast between the layers. The creamy top later meets the rich, dense bottom layer, and they are really tasty! They also set up beautifully, which makes them easy to slice and serve, and they have very little by way of crumbs. We’ve had leftovers in the fridge for a few days, and I will be very sad when they’re all gone.
**Just a quick note – I made my recipe in a 9 x 9 pan, which is why they are so thin. Manuela suggested an 8 x 8 pan, which I would definitely recommend, I just don’t have one at the moment! Both work, but if you’re looking for height, stick with the smaller size.
