Honey Dijon Chicken Tenders

There are so many foods (especially from my childhood) that I have long loved but that evade me in the kitchen. Things like tater tots and chicken tenders are favorites of mine, but things I would never think to make on my own. I don’t know why – especially after making these chicken tenders – because they are so incredibly easy! And the best part is – when you make indulgent foods at home you can control what goes into them, and how healthy or unhealthy they’ll be. (more…)


Hearty Chicken Soup and Pumpkin Cran-Apple Walnut Loaf

When I saw the first cranberries of the season arrive in grocery stores, I got so excited I bought a big container of them, and proceeded to leave them in the refrigerator for weeks. I’d notice them from time to time, and briefly consider what I could do with them, but it wasn’t until the season’s first blizzard a few weeks ago when I was stuck inside all day that I finally forced myself to put them to use. Very uncharacteristically, I found a vegan bread recipe (originally Vegan Pumpkin Cranberry Apple Pecan Bread from Joy the Baker) that sounded incredible – so I decided to give it a try. Admittedly, I added a couple of eggs to bind the bread and keep it from crumbling, but apparently it’s just as good without! (more…)


Quinoa Summer Salad

This will just be a quick post, but I did want to share this recipe because it was really yummy! A couple of weeks back, we were having company over but didn’t have much time to shop for ingredients. We had some quinoa in the cupboard, and I’d (surprisingly) never cooked with it before, so I went in search of some inspiration for a quinoa salad. I looked at a few recipes, and ended up making a pretty tasty salad that was light but flavorful. I didn’t really measure anything, however I’ve provided some safe guesstimates below. This is one of those recipes that is really open to interpretation though, so if you find you kitchen full of different ingredients, give it a try! I’d venture to guess it’ll be pretty good too.
