Chocolate Buckwheat Cake

I have some happy news to share today. Gluten is back! I got some test results back yesterday and I am not gluten intolerant, I don’t have celiac’s disease, and I no longer have any reason to be gluten-free. Yipee!! And I got some other GREAT news yesterday as well that might solve my two+ year saga with stomach pain, which means I can start eating gluten again AND feel good. Pretty much the best news ever. But the point of all of this is – gluten is BACK. The heart and soul of this here baking blog is BACK. I’m thrilled! I still have a few gluten-free recipes to share, and still plan to make gluten-free recipes from time to time – mostly just to use up all the super duper expensive ingredients I bought, but also because I appreciate the challenge of crafting tasty gluten-free recipes. That being said, I saw a lot less friends stopping by my little bloggy corner of the blogosphere when I was sharing gluten-free recipes all the time, so for most regular visitors, the reintroduction of gluten = happy news. Caramelized Lemon Cake (GF)

Can anybody tell me how it got to be JULY 9th?! It feels like yesterday I was buttoning up my peacoat to go outside, except that really, that was MONTHS ago now! I think the summer goes by about 10x as fast as the rest of the seasons, because before I even realize it’s here, it’s already half over. Anyway, that of course has nothing to do with this lovely lemon cake, I’m just feeling a little cheated at how fast this summer is going. (more…)

Strawberry Cupcakes for Easter

In all the time I’ve been a blogger, I’ve never gotten into the groove of sharing holiday-themed recipes in advance of the holiday. Obviously it makes sense, nobody wants a recipe for Easter Cupcakes when Easter is over, but I’ve just never put enough planning into it to make it work. Well, this is my newfound attempt at getting holiday content up and shared BEFORE the holiday, and I’m quite pleased with what I have to share! (more…)

Toasted Coconut Meyer Lemon Curd Layer Cake

Before this cake, I’d never really thought to combine lemon and coconut. The flavors are vastly different, and don’t necessarily seem like they’d play nice when combined in a dish. That said, a couple of weekends ago I was asked to make a really decadent, luscious dessert, and immediately I thought to make something with lemon and coconut. When I started doing a bit of recipe research, I realized the flavor combo is actually a popular one, so I decided to go with it. I found several recipes that looked good, and ended up taking components from a few different places to make one incredible cake. (more…)

Double Chocolate Fudge Cupcakes

Chocolate. My all-time favorite food, and favorite baking ingredient (only second to butter)… the word excites so many senses. Chocolate bark, chocolate bars, chocolate chips, cocoa powder, cocoa butter, cacao beans, cocoa nibs, I’ll take it any way I can get it. I hear the mention of chocolate and I feel giddy with excitement. Chocolate is my first love, and while not my only one, I still find it to be completely perfect, and delicious in it’s perfection. Especially the extra dark, extra bitter variety — can’t go wrong there. So it’s with a great proclamation of love that I bring you this, the masterpiece to end all chocolate masterpieces, DOUBLE CHOCOLATE FUDGE cupcakes. (more…)
