Peppermint Mocha Oreo Cupcakes

I’ve probably mentioned this before, but I am such a sucker for good marketing. As soon as seasonal and holiday-themed goodies hit store shelves (and barista counters), I am all over it. Think Pumpkin Spiced Iced Coffee from Dunkin, and Peppermint Mocha Lattes from Starbucks. Then, you extend that to goodies in the supermarket, like everything seasonal that Trader Joes has ever made (I love that place) — particularly, their Trader Joe’s Peppermint Joe Joe’s.  There is just too much goodness this time of year, and I find it utterly impossible to resist. Individual Chocolate Caramel Poke Cakes

It feels like it has been forever since I did any baking with chocolate. The first part of my year was pretty lean on the baking in general, and then when I finally got back into the swing of things, the focus was on fruit and citrus and summery flavors all the way. Now that the seasons are changing, and the weather along with it, I can’t ignore that it’s time to change up my recipes, too. This year, I definitely didn’t feel like I got enough of the fruity, citrusy, summery stuff done, but fortunately, I love apples and pumpkins and warm spices, and of course I love chocolate the most. So I guess it’s time to get back to it now, and these adorable little cakes weren’t a bad place to start. (more…)


Ginger Peach Pound Cake

I thought my days of baking with peaches were over for this year, but then I got my hands on some more beautiful fruit, and this cake was born. In my typical fashion, I went on an epic blog search for the perfect peach recipe, and had many contenders for the job. I wanted to make a breakfast recipe, to follow an evening that ended with rich chocolate poke cakes for dessert (recipe coming soon!). It seemed like a “lighter” recipe for the morning would be just the thing, which is a bit of a joke when you consider I decided to make pound cake, but bear with me for a few minutes and I think you’ll be convinced too. Coconut Cupcakes with Cream Cheese Frosting

It probably won’t come as a shock, but I used to be a big fan of the Food Network. I’d watch Ina and Giada and Bobby and Tyler all day long, salivating over their dishes, and wishing I could be just like them. As someone who is completely enamored with food, it seemed pretty obvious that that’s how I would spend my idle time — especially in college, when I would rather have done anything than homework. But as I’ve grown up, I’ve grown out of it somewhat, opting for ridiculous reality TV, network shows, and HGTV. When I was going through the home-buying process, kitchen reno’s and backyard re-dos were so much more my jive, so for a long time that’s all I would watch. (more…)


Strawberry Buttermilk Cake

It seems that here in New England, most of our native crops are late this year. Given the looooonnngggggg winter, it’s really no surprise. I still feel like I’m thawing from a deep freeze! Usually by now we’d have a bounty of fresh local strawberries, but I only just picked up my first pint this weekend. They looked perfect to the eye — lush and red, and perfectly shaped — but once I snuck a few, I found that their sweetness wasn’t quite all the way developed. I had been eyeing this cake from Joanne’s blog for days, so it seemed the perfect application for the tart, juicy berries. (more…)


Fresh Fig, Walnut, and Rosemary Upside-Down Cake

Hello! How are you?! It’s been a while. Since I last wrote something here, I had my final wedding dress fitting, Kevin and I moved into our new condo, we traveled for wedding appointments, and started condo renovations. To kick it all off, we tore down a wall and painted our bedroom. We also bought 4 new toilets (even though we only have one bathroom…), finally successfully installed one of those toilets that actually fits in our microscopically small bathroom, we installed two closet systems, and a shelving pantry area behind our new kitchen, plus picked paint colors for the entire place, painted the pantry, started painting and priming the in-transition living room and made about 1,000 trips to Home Depot. It’s starting to feel more like Home Depot is my home than our condo! (more…)


Honey Lemon Bundt Cake

For the Secret Recipe Club this month, I was assigned Nayna’s blog Simplyfood. She lives in the UK which automatically makes me intrigued since I’ve never been to Europe, and her blog has tons of unfamiliar to me recipes so I had lots of fun looking through them. I haven’t been doing a ton of baking lately, so I really wanted to find something sweet to make and eat for dessert, and when I came across this Lemon and Honey Cake, I was sold!  (more…)
