Strawberry-Almond Cornmeal Cake

Hey there friends… long time no see! It’s been a bit — I’ve missed you! I also really missed writing, and being in the kitchen whipping up goodies. The good news is that I survived knee surgery, and even better, the surgeon said it went really well. It only took him 39 minutes to cut me open, harvest my hamstring, drill through some bones, and give me a new ACL. It still totally blows my mind that the procedure is so “simple.” The less great news is that recovery is pretty tough, and it’s going to take a lot more than 39 minutes to get better. But I’m making small strides every day, so that’s really all I can ask for. (more…)


Ricotta Pound Cake

So can I tell you all a (not so secret) secret? I haven’t been baking much lately. It’s probably been pretty obvious with the lack of new recipes, but I’m still sad to own up to it. The kitchen is my happy place, and I haven’t been making enough time for it lately. Instead, I’ve been trying to stuff myself with healthy foods (fresh fruit and veggies don’t exactly require a lot of prep work…), as much activity as my bum knee will allow, and as much fun as I can handle before surgery takes me down for a while. Chocolate Cake with Fluffy Peanut Butter Frosting

I have this theory that all men love peanut butter and chocolate together. It’s not an exclusive observation — there are many women that do, too (and I’m one of them!), but I swear the vast majority of the male population, at least that I’ve encountered in my life, goes crazy for this combo. Because I like to bake for the special people in my life, and because I, too, love those two flavors together, I feel like I am constantly thinking about or making creations that marry chocolate and peanut butter. Grapefruit Olive Oil Cake

Last weekend was one of those times when nothing was going my way. I had a really fun couple of days planned and was super psyched come Friday evening, but by midday Sunday I found myself moping in bed with a great pout going. By no fault of mine, or anyone else’s really, all of my carefully laid plans dissolved, and I ended up spending hours curled up in bed with my kitties and a new book. In many instances that’d have been a great use of a day, but last weekend it just felt like a waste. (more…)


Peppermint Mocha Oreo Cupcakes

I’ve probably mentioned this before, but I am such a sucker for good marketing. As soon as seasonal and holiday-themed goodies hit store shelves (and barista counters), I am all over it. Think Pumpkin Spiced Iced Coffee from Dunkin, and Peppermint Mocha Lattes from Starbucks. Then, you extend that to goodies in the supermarket, like everything seasonal that Trader Joes has ever made (I love that place) — particularly, their Trader Joe’s Peppermint Joe Joe’s.  There is just too much goodness this time of year, and I find it utterly impossible to resist. Individual Chocolate Caramel Poke Cakes

It feels like it has been forever since I did any baking with chocolate. The first part of my year was pretty lean on the baking in general, and then when I finally got back into the swing of things, the focus was on fruit and citrus and summery flavors all the way. Now that the seasons are changing, and the weather along with it, I can’t ignore that it’s time to change up my recipes, too. This year, I definitely didn’t feel like I got enough of the fruity, citrusy, summery stuff done, but fortunately, I love apples and pumpkins and warm spices, and of course I love chocolate the most. So I guess it’s time to get back to it now, and these adorable little cakes weren’t a bad place to start. (more…)


Ginger Peach Pound Cake

I thought my days of baking with peaches were over for this year, but then I got my hands on some more beautiful fruit, and this cake was born. In my typical fashion, I went on an epic blog search for the perfect peach recipe, and had many contenders for the job. I wanted to make a breakfast recipe, to follow an evening that ended with rich chocolate poke cakes for dessert (recipe coming soon!). It seemed like a “lighter” recipe for the morning would be just the thing, which is a bit of a joke when you consider I decided to make pound cake, but bear with me for a few minutes and I think you’ll be convinced too.
