Lemon Ricotta Pancakes with Berry Sauce

One thing I am grateful for is to live with someone who has a great creative mind when talking about food. I would not have guessed when I started dating Kevin that he would be the muse to my baking. Since I started my new job with much longer days, he’s been making dinner for us pretty much every evening, and I’m always pleasantly surprised at what I come home to eat! A lot of the times when I’m in the kitchen baking I have a plan and a recipe and I’m armed and ready, but there are times when I need an idea or some inspiration, and he comes to the rescue. It’s a pretty great quality, and pretty useful too – you have him to thank for these incredible pancakes! (more…)

Crispy Yeasted Waffles

This past weekend was my birthday, which of course meant celebrating with lots of food. Saturday was the big day, so Kevin and I started the day with brunch at Aquitaine  in the South End, and then went to dinner with my family at Citizen Public House that evening. We had tickets to the Umass vs. UVM Frozen Fenway game in the afternoon (Go Umass!), so Citizen Public House was a perfect location for a birthday dinner, and certainly didn’t disappoint. (Review coming sometime soon!) Come Sunday, I was still feeling in the birthday spirit, but didn’t think anyone’s wallet would look kindly on another meal out, so I decided to make something fun at home. (more…)

Eggnog Cranberry Crumb Coffee Cake

Happy New Year! Welcome to the first post of 2012… probably should’ve been posted in 2011, but I got a little excited in the kitchen, and a little lazy on the blog, so I’m still working through holiday posts. Not to fear – there are only a few left, and I have so many fun and exciting ideas for the new year! In the meantime, this recipe would be great for using up any leftover eggnog you’ve still got lying around from the holidays. It’s not heavy on the eggnog flavor, but is still extremely flavorful. Lemon Cream Flax Muffins

I can’t believe Christmas has already come and gone. It felt like the just holiday flew by this year, despite a 4-day weekend – very long by my standards – and two separate celebrations. I always think after the fact that I wish I’d gotten more into the holiday spirit. After all, it is my favorite time of year, but somehow it always sneaks up and then disappears, before I even have time to register it’s presence. But New Years is still looming in the near future, so there’s one more exciting event to look forward to before the long winter. Plus now that the holiday has passed, we can move onto bigger and better things that aren’t all about Christmas cookies and cranberries and gingerbread. To be honest, those are all things I LOVE, but so are things like these outstanding and unbelievably scrumptious lemon cream flax muffins – that are not the tiniest bit festive, but are every bit delicious. Multigrain Yogurt Pancakes with Blueberries

I have to preface this post by saying… it has nothing to do with the holidays, or holiday flavors, or anything remotely festive. BUT it’s a great recipe, and would easily work on Christmas morning or any other morning you’re looking to warm yourself up with something simple but soul satisfying. I really love pancakes, but for some reason I very rarely make them. When I think about making breakfast foods, I usually gravitate towards muffins and coffee cakes, because I love my portable carbs.
