Hearty Chicken Soup and Pumpkin Cran-Apple Walnut Loaf

When I saw the first cranberries of the season arrive in grocery stores, I got so excited I bought a big container of them, and proceeded to leave them in the refrigerator for weeks. I’d notice them from time to time, and briefly consider what I could do with them, but it wasn’t until the season’s first blizzard a few weeks ago when I was stuck inside all day that I finally forced myself to put them to use. Very uncharacteristically, I found a vegan bread recipe (originally Vegan Pumpkin Cranberry Apple Pecan Bread from Joy the Baker) that sounded incredible – so I decided to give it a try. (Late) Thanksgiving Feast

I know Thanksgiving was a week and a half ago, and I’d be better off posting ginger molasses chews or peppermint bark, but I’m still playing catch-up! I won’t bore you with lots of Thanksgiving stories, but I do have a few recipes I’m dying to share. I even tried my hand at a few savory items on our Thanksgiving menu, and they came out quite well, if I do say so myself 🙂 (more…)

Cream Cheese Banana Bread

Have you ever bought a bunch of bananas hoping that they’ll ripen really fast so you can use them for baking? Seems a silly idea right? To buy perfectly edible fruit, and to let it go so far that it turns brown and gooey, and fruit flies begin to swarm? And yet, it’s the most perfect idea ever. On this particular occasion, I didn’t buy bananas to let them rot, I simply bought too many and they ripened faster than I’d anticipated. So when I found myself in such a predicament, I knew there was only one solution: to bake banana bread! (more…)

Strawberry Cream Cheese Bread

I’ve been eyeing this Strawberry Bread recipe for a while now, and am thrilled I finally got the chance to make it. It’s not that there’s anything particularly special about it, though it does use cream cheese as part of the batter, and that totally intrigued me. Something about the addition of cream cheese conjures up this image of a wonderfully flavorful and moist bread. I made this recipe late one night last week, and due to the limited time I wasn’t about to make any crazy alterations. I subbed in some white whole wheat flour as usual, but only a little bit and I left everything else alone. I’ve realized lately that despite my wanting to make things more nutritious, sometimes things are better left untouched. This bread is a testament to that thinking.


BBB: Blueberry Banana Bread

Last week a coworker requested banana bread for my weekly work treat, but I didn’t have bananas on hand to bake with. So I picked some up, waited until they were ready, and threw together a loaf of tasty banana bread. But being myself, I had to change it up somehow to make it more exciting. I’d recently seen a recipe for Blueberry Banana Bread that I’d wanted to try, so I combined ideas from that particular recipe and another (my go-to Banana Bread recipe, from Flour Bakery in Boston) to make my own creation. Strawberry Bread and a Rhubarb Repeat

One of my favorite things about baking it’s that it is extremely therapeutic. With cooking, your mind can wander — there is no recipe to follow, no chemistry to perfect. But with baking, you have to be tuned into the task at hand, paying close attention so as to get it just right. The recipe is a step-by-step guide of just what yo do, to create the densest brownies, the crispest cookies — there is no grey area, it’s all black and white. When my mind is running in a million directions, full of uncertainty and lot’s of “gray,” baking relieves the stress, even if it’s only temporary. To me, it is not only a passion, but a therapy. Espresso Banana Bread

My parents have had three rotten bananas in their freezer for ages. My mother refuses to throw them away (and props to her, I hate waste!), but doesn’t often bake with bananas herself, so I figured I’d take matters into my own hands. I typically make the Flour Bakery recipe for banana bread, which is absolutely fantastic, but since I’ve already written about that recipe on this blog, I decided to try something new. So I looked at a few recipes for inspiration, and made me own creation! (more…)
