Pear Buckwheat Pancakes and Savory Sunday

Can you believe it’s already Monday night? Friday seemed like just yesterday, and he we are, already 1/5 of the way through week! It’s incredible how time flies — faster and faster every day, it seems. This weekend was a good one — on Saturday I was lucky enough to attend a 55th wedding anniversary with AW. I tried to put myself into the shoes of the happy couple, and was completely overwhelmed at the thought of spending double my age plus a few years’ time married to someone. It was truly incredible. Saturday night, AW and I went to a local restaurant we’ve been dying to try, Rialto in the Charles Hotel, and it was great — definitely everything we’d hoped it would be. We ate off the bar menu because we were starved by the time we got there, and had some fantastic cocktails. The best part? We were home early enough to have the rest of the evening to relax! But being one who can never relax for long, I set to searching for a breakfast recipe for the next morning, and then we ran out for some groceries. I have a disgusting obsession with grocery stores, and grocery shopping. Should I be concerned?

The recipe we picked for Sunday was one that I’d put into my recipe spreadsheet recently, from a blog I recently discovered, Bake at 350. The recipe was for Pear Buckwheat pancakes, which sounded like the perfect Sunday morning breakfast.

And to make them even more special, I substituted the milk in the recipe for buttermilk, so they were really Pear Buttermilk Buckwheat pancakes, and so hearty and delicious. On our late-night grocery run, we picked up some Almond Milk, something I’d just recently tried and thought AW might enjoy too, so we made Almond Milk Lattes to have while we were making breakfast, and they were so delicious. I think we were both surprised at just how tasty the almond milk made them — they barely needed extra sweetness (maybe just a little squeeze of agave nectar) and they were perfect!

In addition to the pancakes, we were craving some protein, so we (AW actually, he gets all credit here) threw together some eggs (to make it a Savory Sunday!), and it was a great mid-day meal. He put goat cheese, roasted red peppers, a splash of half-and-half, salt and pepper into the eggs, and then cooked up some chicken sausage which we put on top. They were so delicious! And really the perfect accompaniment to the pancakes and lattes. I was stuffed for the rest of the afternoon!

I also bought ingredients to whip up some Raspberry Lemonade bars which caught my eye recently, but unfortunately homework got in the way, and those had to be postponed. But I made them today, and let me tell you — they are so good! I just had one, and once the sun comes back (which may be a while), I’ll shoot a few pictures and tell you about them! Until then…
