Levain Copycat Cookies, Take Two

So I have a secret to share with you, which makes it not like a secret at all, but I feel I must confess.  Are you ready? Here goes… as of two days ago, I’d never been to Levain Bakery. A sin, I know, but I made good on my promise of going someday and went to the bakery yesterday when I was in the city for the day. I was starting to feel pretty lame about having made TWO copycat cookie recipes, and never even having been to the place.  Does that make me a poser? Perhaps, but I’m okay with that. However now I can say I’ve been, and without a doubt, that it changed my life. (more…)

Blueberry Dark Chocolate Chunk Cupcakes

Before the cupcakes came about, I hadn’t been in the kitchen for an entire week. Sure, I make myself breakfast and lunch for work every day, but mixing up some overnight oats and throwing together a salad — those things hardly constitute getting dirty in the kitchen. I thought once I’d settled into my new job, I’d find that I had more free time and less stress, but guess what? That’s not the case. I’m finding it hard to cook as much as I would like to, so I’m going to have to get creative or risk losing my skills! Tomorrow I’m diving back in, and I already have a dinner recipe planned for Wednesday. Watch out world! I’m getting my act together for real this time. (more…)

Chocolate and Peanut Butter Pudding Parfaits

For the 4th of July, I went up to visit a good friend of mine, Hannah, in Maine. Before I went, I asked her what kind of dessert she’d like for me to make, and she said something with cream, like eclairs or cream puffs. But eclairs and cream puffs don’t travel well, especially in the oppressive heat we’ve been having, so I decided to consider other options. (more…)

New Discovery: Overnight Oats

I first got the idea for overnight oats from one of my favorite blogs, Carrots ‘N’ Cake. The blogger, Tina, raves about them constantly so I figured it was time to give them a try. I absolutely love oats, in oatmeal, in cookies, in bread, as a crumb topping — oats are awesome! But I’d never used them in this particular way before. They’re a fantastic breakfast, because you throw it together the night before, and when you wake up, it’s an instant breakfast! All you have to do is pull out a spoon, and dive in. (more…)

Strawberry Crostata

On the Saturday before Father’s Day, my parents and I went for a 20-mile bike ride, and along the way picked up some fresh strawberries from a local strawberry patch. It’s always incredible to have the first local strawberries of the season — no matter how good the supermarket strawberries sometimes seem, they’ve got nothing on the real thing. They were sweet and juicy and tender, and they smelled like heaven. We threw 2 quarts into my mom’s bike-mounted bag, and brought them home. (more…)

Santa Fe Breakfast Bake

This year for Father’s Day, I decided instead of (just) baking, I’d do something savory too. A Santa Fe Breakfast Bake. We’ve been doing a lot of cooking with chicken sausage in my house lately, so when I found this recipe it seemed like it’d be perfect to adapt a little. Plus, we’re all lovers of Mexican food, my Dad included, so this was right up his alley. It requires a little bit of planning ahead — you make the casserole the night before and then bake it off in the morning — but it is SO good, it’s definitely worth working into your schedule. Lemon Blueberry Crumb Bars

It’s that wonderful time of year when there is so much wonderful fresh produce available, and more and more coming in-season every day. Since blueberries are plentiful (and inexpensive!) right now, I’ve been eating them obsessively, and freezing them for those sad days when you can’t just run to the nearest market and buy them super fresh, and local.

Strawberry Bread and a Rhubarb Repeat

One of my favorite things about baking it’s that it is extremely therapeutic. With cooking, your mind can wander — there is no recipe to follow, no chemistry to perfect. But with baking, you have to be tuned into the task at hand, paying close attention so as to get it just right. The recipe is a step-by-step guide of just what yo do, to create the densest brownies, the crispest cookies — there is no grey area, it’s all black and white. When my mind is running in a million directions, full of uncertainty and lot’s of “gray,” baking relieves the stress, even if it’s only temporary. To me, it is not only a passion, but a therapy. Chocolate Chip Peanut Butter Cookies

A few nights ago, my uncle and his friend came up for dinner with my dad and me, when we were on our mother/wife/brother/son-less stint. Since I was baking for the guys, I knew I didn’t need to make anything pretty or fancy, just downright delicious. When I asked my Dad what he wanted he said “chocolate chip cookies.” Typical. But every time he asks for them, I refuse, so I decided to try to take his request into consideration while putting a more exciting spin on it. And so these yummy Chocolate Chip Peanut Butter Cookies were born. (more…)

Creamy Arborio Rice Pudding
